The first recipe for my blog on blogger is a Tri-Color Pepper Steak recipe that I got from my future uncle’s recipe book I came across in his house (his name is Yorn…I don’t know how to spell it haha but he’s from Denmark! He’s the sweetest joliest man! He has testicular cancer and just had surgery…he’s going through recovery but will have another surgery in May for a brain tumor they also came across…he needs your prayers!!) Anyways, the book is called “So Easy” (my kind of recipe book)!



^^How cute is that?!
- 4 teaspoons canola oil
- 1 ¼ pounds top round, London broil, or flank steak, thinly sliced
- 5 large assorted bell peppers (a mix of red, yellow, and green; 2 pounds total)
- 1 large onion, sliced into half-moons (about 3 cups)
- 4 garlic cloves, sliced
- 1 1/2 cups low-sodium beef broth
- 3/4 cup dry red wine
- 3 tablespoons low-sodium soy sauce
- 1/2 teaspoons freshly ground black pepper
- 11/2 teaspoons cornstarch, dissolved in 1/4 cup cold water
- 3 cups cooked rice

- Heat 2 tsp. oil in large skillet over medium-high heat. Add beef and cook until browned on all sides, about 5 minutes. Transfer meat with its juices to a plate.
^^No one wants raw meat :(

^^Brown the meat like so :)
- Heat remaining 2 tsp. oil in same skillet over medium-high heat. Add peppers and onion and cook, stirring occasionally, 5 minutes. Add garlic and continue cooking until peppers are softened and onions are translucent, about 5 minutes more.

^^First you’re just adding the peppers and onions!
^^After about 5 minutes, add the garlic to the mix and cook for about another five minutes or until peppers are soft and onions are clear!
- Return beef and juices to skillet and add broth, wine, soy sauce, and pepper. Bring to boil. Reduce heat and simmer until liquid has been reduced by half, about 5 minutes. Stir in dissolved cornstarch and cook until mixture thickens, about 2 minutes.

^^Add the mixture of the broth, wine, soy sauce, and pepper with the meat back on pan! This helps the meat to finish cooking and for the sauce to get all around the meat and peppers and onions :)
- Serve over rice (we used white, but if you’re wanting to be legit healthy, try brown!)
^^We had it with a french baguette and martinelli’s apple cider!
This is a recipe we really enjoyed! It was easy and very do-able for a beginning cook! We definitely recommend it :) If you make it, let me know what you think!

I’m praying for peace today as Jamie and I go talk to the continuation school about starting the greatest program ever there—younglife! It’s happening regardless, but we really really want the support from the school so we can do more with these kids who don’t really know too much about God or what the best relationship you could have looks like! Praying for God’s words to flow from our mouths to best communicate younglife to the principal. Praying for the principal to have an open mind and heart and to be thinking about the pros that would come from having this group at their school. Can’t wait to see what comes of this but one thing is for sure: God wants us there so we’re gonna be there! :)
Today is one of those days I just want to sit on the couch with a blanket and watch a movie that makes me cry…hard. But unfortunately, reality is calling. Time for work.
But seriously? haha I move into my apartment in a little more than a week…this is crazy to me as I feel like I just moved into this apartment and finished my freshman year yesterday. It already frightens me a little that the last year has gone by so fast. A year ago, I was anxious but ready to make the thirty hour drive from Minnesota to California to begin the next chapter of my life. I was embracing the change. I know no one knows the future (except for God, thank goodness for that!), but I could not have predicted any of this a year ago. I never imagined I would stay in California for the summer and work full-time after the first year of college…EVER! I never imagined I’d have a serious boyfriend who loves the Lord above all else and encourages me daily in my own personal walk with God! I never pictured I’d be getting to live with some of my best friends (that I’d even have best friends!!!) my sophomore year! I look back at the year that flew by and laugh at how my expectations for the year were drastically different than anything I could have tried to think up! God has provided time and time again (especially this summer), giving me work to pay for this expensive, but amazing school, giving me the opportunity to have lots of time with my sister and boyfriend, and giving me a week of quality time with my mom. God is the best planner. That is what I have learned, or continue to learn again and again. Although I like to plan, I have to remind myself repeatedly that it’s always HIS ways that are the best! As the school year draws near, I have to keep myself in check. 17 units, two part-time jobs, being in a d-group, leading a d-group, being a YoungLife leader/trying to start YL at a new school, and maintaing relationships is a LOT to take on but I am determined and God is my strength and comfort and planner. Just gotta keep trusting :)

Don’t believe that true love can be found from tv? This girl (DeAnna) was on a season of “The Bachelor” while Michael was on a season of “The Bachelorette”. DeAnna became friends with the Michael through both of them being on the show. Michael was dating her friend. Michael and DeAnna’s friend thought it would be fun to double date, so Michael set her up with his twin brother Stephen. Stephen & DeAnna are both strong Christians and their love for each other and God is so real! Read the proposal story…love can happen anywhere :)
“I excused myself to the restroom. When I returned, the only person standing in the room was Stephen’s mother, Lynn. She was holding a bouquet of flowers and she was crying. Seconds went by for what seems like forever and Stephen’s mom was still crying. Then, my feeling turned to fear as I blurted out, ‘Mama Bear, you’re scaring me.’ Stephen’s mother told me about how she had prayed for a woman like me to come into Stephen’s life, how she is happy to have me as a daughter, and that she loved me so much. Then, she hugged me and walked me about 25 yards down the beach to Stephen’s father, Frank. Frank did the same thing, told me that he already considered me a daughter, he loves me very much, and that he wants me to know that I now have two fathers to trust and confide in. Frank then walked me another 25 yards down the beach to Stephen’s twin brother, and my friend, Michael. Michael and I just cried because we were both so happy! Michael told me he loved me and was happy to call me his sister. Michael then walked me 25 yards down the beach to my very own father. My dad hugged me and kissed me, told me he loved me, and how proud he was of me. My father then walked me down the beach toward the ocean and in between two sand dunes, standing in the middle of flowers laid around him, my father handed me off to Stephen. Stephen told me how much he loved me, how happy he was that he found me, and that he wanted to love me forever. He then got down on one knee and asked me to marry him. This will forever be one of the best days of my life. It was a perfect moment and a perfect proposal.”
